Chef Peter Chan
We are pleased to welcome Chef Peter Chan to our culinary team! Chef Peter comes to The Court of Two Sisters from the French Continental restaurant, The Flaming Torch located in uptown New Orleans. His other experience includes two years as the Executive Chef at the Sandals Golf and Spa Resort on St. Lucia, West Indies. At Sandals Chef Chan oversaw a staff of 120 people and the operation of seven restaurant outlets with cuisines varying from French to Italian, Caribbean and Pan-Asian. Chef Chan was also the Corporate Chef of Concepts by Staib in Philadelphia, PA and was Executive Chef of City Tavern also in Philadelphia. Chef Chan, who was born in Hong Kong and raised in New York and Philadelphia, began his culinary career at age 16 and three years later began a five-year apprenticeship under a European chef. At age 23 he became the youngest executive chef in Philadelphia when the Omini Hotel at Independence Park promoted him from the executive sous chef position. Additional achievements include receiving Restaurant and Institution Magazine's IVY Award in 1999 while at City Tavern and being named the silver medallist in the 2000 Caribbean Culinary Federation Competition. |
